We source Melbourne’s most magical milk from St David’s Dairy, make all our nut pastes from perfect Piedmont hazelnuts and incomparable Iranian pistachios, and only ever use the most coveted couverture chocolates. Plus, we say “not on your life” to past-their-peak fruits or puny purees and instead hand-make all our artisanal sorbets using the best in-season fruits and the finest fruit purees.
